Apple Balsamic Slaw
  1. 4 cups thinly sliced green cabbage
  2. 2 cups thinly sliced purple cabbage
  3. 1 carrot, cut into matchstick sized pieces
  4. 2 green apples (peeled and cored), cut into matchstick sized pieces
  5. 2 Tablespoons minced chives
  6. ¼ cup Aged Gravenstein Apple Balsamic Vinegar
  7. 1 Tablespoon Dijon mustard
  8. 1 Tablespoon sugar
  9. ½ teaspoon salt
  10. ½ teaspoon pepper
  11. ¼ teaspoon onion powder
  12. pinch of cayenne pepper
  13. ¼ cup Whole Fruit Eureka Lemon EVOO
  1. In a large bowl combine green cabbage, purple cabbage, carrots, apples, and chives. Toss well and set aside.
  2. In a separate bowl add Gravenstein Apple White Balsamic Vinegar, Dijon mustard, sugar, salt, pepper, onion powder, and cayenne. Slowly whisk in Whole Fruit Eureka Lemon EVOO and whisk until completed blended. Pour over apple slaw mixture. Stir well. Cover and refrigerate for about 1 hour. Stir before serving. Enjoy!
