Coconut Almond Snack Mix
  1. 1 cup powdered sugar
  2. 1 cup + 2 tablespoons shredded sweetened coconut
  3. 8 cups Rice Chex
  4. 1 cup raw almonds, coarsely chopped
  5. ½ cup natural almond butter
  6. 1 cup milk chocolate chips
  7. 2 tablespoons Organic Butter EVOO
  8. 1 teaspoon Aged Coconut Balsamic Vinegar
  1. Line a large baking sheet with waxed paper; set aside. Combine powdered sugar and 1 cup of shredded coconut in a food processor; process until coconut is finely chopped. Transfer to a Ziploc bag and set aside.
  2. In a large bowl, place cereal and chopped almonds; set aside. Combine almond butter, milk chocolate chips and Butter EVOO in a small microwave safe bowl. Microwave on medium-high for 1 minute. Remove from microwave and stir until smooth (microwave an additional 30 seconds if needed). Add Coconut Balsamic Vinegar and stir well. Pour chocolate mixture over cereal and stir to completely coat. Transfer cereal to Ziploc bag; seal and shake until cereal mixture is evenly coated. Remove from bag and arrange on the prepared baking sheet. Sprinkle with additional shredded coconut and let dry. Enjoy!
