Cucumber Smoked Salmon Salad

Cucumber Smoked Salmon Salad
  1. 1 English cucumber (aka hothouse cucumber)
  2. 1 cup cherry tomatoes, halved
  3. 1 avocado, chopped
  4. ½ cup black olives, sliced
  5. ¼ c. crumbled feta cheese
  6. 16 ounces smoked salmon
  7. 1 t. dried dill (or 1 T. fresh dill)
  8. 2 T. Ultra Premium EVOO
  9. 2 T. Aged Oregano Balsamic Vinegar
  1. Remove both ends of the cucumbers and cut in half (each piece will be about 6 inches long). Using a vegetable peeler, thinly slice the cucumber in lengthwise ribbons. Transfer cucumber ribbons to a large serving platter. Top with cherry tomatoes, avocadoes, black olives, feta cheese, and smoked salmon. Sprinkle with dill and drizzle with Ultra Premium EVOO and Oregano Balsamic Vinegar. Enjoy!
