Grapefruit and Avocado Salad
  1. 6 cups torn butter lettuce, gently washed
  2. 2 red or pink grapefruits, supremed* (sectioned)
  3. 1 avocado, sliced
  4. ¼ cup Aged Grapefruit Balsamic Vinegar
  5. 1 teaspoon honey
  6. ½ teaspoon kosher salt
  7. ¼ teaspoons freshly ground pepper
  8. ¼ cup Whole Fruit Eureka Lemon EVOO
  1. To Prepare Vinaigrette: Combine Aged Grapefruit Balsamic Vinegar, honey, salt, and pepper in a mixing bowl. Slowly whisk in Whole Fruit Eureka Lemon EVOO until emulsified. Set aside.
  2. To Serve: Place lettuce in a large serving bowl and arrange with grapefruit sections and avocado slices. Drizzle with grapefruit-lemon vinaigrette. Serve immediately.
