Green Chili Chicken Wings

Green Chili Chicken Wings
  1. 4 pounds fresh chicken wings
  2. 3 ½ tablespoons Baklouti Green Chili EVOO
  3. 2 tablespoons fresh lime juice
  4. 1 teaspoon lime zest
  5. ½ cup butter, softened
  6. 8-10 Serrano chili peppers
  7. 1 ½ teaspoons Baklouti Green Chili EVOO
  8. 1 tablespoon fresh lime juice
  9. ½ teaspoon lime zest
  10. ½ teaspoon salt
  11. ½ teaspoon salt
  12. ¼ teaspoon pepper
  1. To Prep Wings: If you have full wings, you will need to make two cuts – between the wings two distinct joints. The first cut is the joint between the flat midsection and wing tip (discard tip or save for homemade stock). The second cut is the joint between the drummette and the flat wing midsection of the wing. Place drummettes and flat wings in a large bowl. Toss with Baklouti Green Chili EVOO, lime juice, and lime zest. Cover and refrigerate at least 8 hours.
  2. To Prepare Butter: Cut off the stems of the Serrano chili peppers. Place in a food processor and pulse until finely chopped. Add to softened butter. Stir in Baklouti Green Chili EVOO, lime juice, lime zest, and salt. Cover and refrigerate.
  3. To Prepare Wings: Preheat oven to 400 degrees. Remove wings from refrigerator while oven heats. Lightly grease a large, rimmed baking sheet. Place wings in a single layer and sprinkle with salt and pepper. Cook for 35 minutes (drain off any liquid that accumulates). Flip and cook an additional 35 minutes or until crispy and brown. Remove wings from oven and place in a large bowl. Toss with 2 tablespoons green chili butter. Melt additional 2 tablespoons green chili butter and pour on top of the wings.
