Maple-Chipotle Glazed Meatballs
  1. 1 tablespoon Chipotle EVOO
  2. ¼ of a small sweet onion, minced
  3. 1 clove garlic, minced
  4. 12 ounces light beer
  5. ¼ cup Aged Pure Maple Balsamic Vinegar
  6. ¼ cup pure maple syrup
  7. ¼ cup tomato paste
  8. ½ cup brown sugar
  9. ¼ teaspoon salt
  10. ¼ teaspoon pepper
  11. 2 pounds frozen meatballs
  1. Heat saucepan over medium heat. Add Chipotle EVOO, onion, and garlic. Sauté for 2-3 minutes. Stir in beer, Aged Pure Maple Balsamic Vinegar, maple syrup, tomato paste, brown sugar, salt and pepper. Bring mixture to a boil. Reduce heat and simmer for 10 minutes.
  2. Place meatballs in a large crockpot and pour maple-chipotle sauce over them. Gently toss to coat. Cover and turn crockpot on high for 3-4 hours or low for 6-8 hours. Gently stir the meatballs every hour to avoid sticking. Enjoy!
