Raspberry Balsamic Chipotle Goat Cheese Log
  1. ½ cup chopped pecans
  2. 1 teaspoon Chipotle EVOO
  3. ¼ teaspoon kosher salt
  4. pinch of pepper
  5. 3 tablespoons Aged Raspberry Balsamic Vinegar
  6. 1 tablespoon Chipotle EVOO
  7. 1 tablespoon honey
  8. 10 ounce goat cheese log
  9. 1 teaspoon chopped fresh rosemary
  10. ½ cup fresh raspberries
  11. 
  1. Preheat oven to 350 degrees. Toss pecans with 1 teaspoon Chipotle EVOO and spread on a rimmed baking sheet. Sprinkle with salt and pepper. Toast in the oven for 5-10 minutes (or until golden brown) stirring occasionally. Remove from oven and let cool completely.
  2. In a small saucepan, combine Aged Raspberry Balsamic Vinegar, 1 tablespoon Chipotle EVOO, and honey. Bring to a boil and then reduce heat. Simmer until mixture reduces to about 2 ½ tablespoons.
  3. To serve: Roll goat cheese log in toasted pecans (pressing gently to completely cover the cheese). Arrange raspberries around the cheese. Drizzle with balsamic vinegar reduction and sprinkle with chopped rosemary. Serve with baguette slices or crackers. Enjoy!
