Apple Balsamic Slaw



Ingredients:
4 cups thinly sliced green cabbage

2 cups thinly sliced purple cabbage

1 carrot, cut into matchstick sized pieces

2 green apples (peeled and cored), cut into matchstick sized pieces

2 Tablespoons minced chives

¼ cup Gravenstein Apple White Balsamic Vinegar

1 Tablespoon Dijon mustard

1 Tablespoon sugar

½ teaspoon salt

½ teaspoon pepper

¼ teaspoon onion powder

pinch of cayenne pepper

¼ cup Whole Fruit Eureka Lemon EVOO


Directions:

In a large bowl combine green cabbage, purple cabbage, carrots, apples, and chives.  Toss well and set aside.  

In a separate bowl add Gravenstein Apple White Balsamic Vinegar, Dijon mustard, sugar, salt, pepper, onion powder, and cayenne. Slowly whisk in Whole Fruit Eureka Lemon EVOO and whisk until completely blended. Pour over apple slaw mixture. Stir well. Cover and refrigerate for about 1 hour. Stir before serving. Enjoy!
