Slow Cooked Pineapple Pork

Ingredients
  1. 1 (about 2.5 pounds )center cut pork loin
  2. 2 T. Cilantro and Roasted Onion EVOO
  3. 1 T. freshly cracked black pepper
  4. 1 T. garlic paste
  5. ¼ c. Pineapple Balsamic Vinegar
  6. ¼ c. hoisin sauce
  7. 1 large can pineapple chunks with 100% juice
Instructions
  1. Trim excess fat from pork loin (leaving a little on the top). Generously season pork loin with black pepper; set aside. Heat a large skillet over medium high heat. Add Cilantro and Roasted Onion EVOO and seasoned pork loin. Brown all sides (8-10 minutes total). Transfer pork to crock pot. Add remaining ingredients and cover with lid. Cook on low for 6-8 hours (for sliced pork) or 8-10 hours (for shredded pork) – periodically baste the pork with the juices. Remove pork and transfer to a platter. Arrange pineapple chunks around pork. Enjoy!
