Sweet and Spicy Sauerkraut

Sweet and Spicy Sauerkraut
  1. 32 ounces sauerkraut, rinsed well and squeezed dry
  2. 8 ounces bacon
  3. 1 c. chopped onion
  4. ¼ cup Aged Red Apple Balsamic Vinegar
  5. ½ cup chicken broth or stock
  6. 1 Tablespoon brown sugar
  7. 1 ½ teaspoons caraway seeds
  8. ¼-1 teaspoon of red pepper flakes (depends on desired heat level)
  1. Chop raw bacon into ½ inch pieces. Place in a sauté pan and cook over medium heat until well browned. Transfer cooked bacon to a paper towel-lined plate (leave bacon drippings in pan). Add chopped onion to bacon drippings and sauté over medium heat for 8-10 minutes. Stir in sauerkraut (rinsed and squeezed dry), Red Apple Balsamic Vinegar, chicken broth, brown sugar, caraway seeds, cooked bacon and red pepper flakes. Cook over low heat for 20-30 minutes, stirring occasionally. Enjoy!
