Tuscan Herb Grilled Vegetables
  1. 1 red onion, cut into eighths
  2. 1 medium zucchini, cut into 1 ½ inch pieces
  3. 1 medium yellow squash, cut in 1 ½ inch pieces
  4. 1 red pepper, seeds removed and cut into 1 ½ inch pieces
  5. 2 tablespoons Organic Tuscan Herb EVOO
  6. salt and pepper
  7. 2 tablespoons Organic Tuscan Herb EVOO
  8. 2 tablespoons Traditional Style Balsamic Vinegar
  9. 1 teaspoon whole grain mustard
  10. salt and pepper, to taste
  11. 2 ounces crumbled goat cheese
  12. fresh basil, chopped
  1. Preheat grill (medium-high heat). Brush cut vegetables with Tuscan Herb EVOO. Sprinkle with salt and pepper. Place vegetables on the grates and grill until desired tenderness and color is reached, turning occasionally (total grill time is around 4-6 minutes). Remove from grill and place on a large platter.
  2. Combine remaining Tuscan Herb EVOO, Traditional Style Balsamic Vinegar, and whole grain mustard in a container with a tight fitting lid. Shake well. Add salt and pepper, to taste. Drizzle vinaigrette over grilled vegetables. Sprinkle with crumbled goat cheese and fresh basil. Enjoy!!
