Tuscan Herb Zoodles
  1. 2 medium zucchini
  2. 2 medium yellow squash
  3. 1 teaspoon salt
  4. 2 tablespoons Organic Tuscan Herb EVOO
  5. 1 clove garlic, minced
  6. 1 cup cherry tomatoes
  7. salt and pepper, to taste
  8. chopped fresh parsley
  9. red pepper flakes
  10. parmesan cheese ribbons
  1. Spiralize zucchini and yellow squash. Toss with 1 teaspoon salt and place in a colander. Set aside for 20 minutes.
  2. Rinse “zoodles” with cold water. Gently pat dry with paper towels. Heat a large sauté pan over medium high heat. Add Tuscan Herb EVOO and minced garlic. Sauté for 1-2 minutes. Add zoodles and sauté for an additional 3-4 minutes. Add in cherry tomatoes and continue cooking until zoodles reach desired tenderness and tomatoes begin to burst. Add salt and pepper, to taste. Transfer to a serving platter and top with fresh chopped parsley, red pepper flakes, and parmesan cheese ribbons. Enjoy!
