BBQ Chicken Flatbread

Ingredients:

1 tablespoon Chipotle EVOO + additional for brushing on flatbread

¼ cup minced onion

1 cup ketchup

¼ cup brown sugar

½ teaspoon garlic powder

2 tablespoons Pomegranate Balsamic Vinegar

½ teaspoon salt

¼ teaspoon pepper


2 pre-made flatbread pieces (we used Naan flatbread)

1 cup cooked chicken (shredded or chopped)

1 cup shredded cheddar cheese  

½ cup French’s Fried Onions


Preheat a small saucepan over medium heat.  Add Chipotle EVOO and minced onion; sauté until onion turns translucent (not browned).  Stir in ketchup, brown sugar, garlic powder, Pomegranate Balsamic Vinegar, salt and pepper.  Reduce heat and simmer for 20 minutes.  

Preheat oven to 400 degrees.  Cover a baking sheet with parchment paper and arrange flatbread on the baking sheet.  Brush each flatbread with ½ teaspoon Chipotle EVOO.  Spread ¼ cup of prepared BBQ sauce over each flatbread and top with chicken, cheddar cheese and fried onions.  Drizzle with additional BBQ sauce and bake in the preheated oven for about 10-12 minutes or until the cheese is completely melted and flatbread is crispy.  Enjoy!
