Apple Balsamic Cider Bread



Ingredients:

2 cups chopped apples (peeled and cored)

1 ¼ cup apple cider

¼ cup Gravenstein Apple Balsamic Vinegar

½ cup Butter EVOO

1 cup sugar

2 eggs

½ cup sour cream

1 ½ cup flour

¾ teaspoon baking powder

¾ teaspoon baking soda

½ teaspoon salt

1 ½ teaspoons ground cinnamon

¼ teaspoon ground nutmeg 

¼ cup sugar

½ teaspoon ground cinnamon


Place chopped apples, Gravenstein Apple Balsamic Vinegar, and apple cider in a medium saucepan.  Bring mixture to a boil and then reduce heat slightly; cook for 30-45 minutes or until apples break down.  Use a hand immersion blender to puree mixture until smooth.  The apple sauce should reduce to about 1 ¼ cups.  Cool completely.  


Preheat oven to 350 degrees.  Lightly oil a 9 x 5 bread pan. Combine ¼ cup sugar and ½ teaspoon cinnamon in a small bowl.  Sprinkle the bottom and sides of the pan with the prepared sugar mixture; set aside. 


In a large bowl whisk together Butter EVOO and sugar. Stir in eggs, sour cream and 1 cup of prepared apple balsamic sauce; set aside. In a separate bowl stir together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir liquid mixture into the dry mixture. Transfer batter to prepared pan and sprinkle with additional cinnamon-sugar. Place in preheated oven and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool for 10 minutes in the pan. Remove the bread from the pan and cool completely on a wire rack. Slice and enjoy!
