Cherry Orange EVOO Oatmeal Cookies

Makes about 18 cookies 


Ingredients:

½ cup Whole Fruit Fused Blood Orange EVOO

½ cup dark brown sugar, packed

1 Tablespoon Aged Black Cherry Balsamic Vinegar

½ teaspoon orange zest

1 egg

½ cup all-purpose flour

½ teaspoon sea salt

½ teaspoon baking soda

¼ teaspoon ground cinnamon

pinch of ground ginger

pinch of ground nutmeg

2 cups quick oats

½ cup chopped pecans, toasted

½ cup dried cherries


Directions:

Combine Whole Fruit Fused Blood Orange EVOO and brown sugar in a large bowl.  Beat on medium-high speed until “creamy” (scraping down sides occasionally).  Stir in Aged Black Cherry Balsamic Vinegar, orange zest, and egg; mix on medium-low speed until combined.  In a separate bowl, mix together flour, salt, baking soda, cinnamon, ginger, and nutmeg.  Slowly stir into sugar mixture; scraping down sides of bowl.  Add quick oats, toasted pecans, and dried cherries; mix well.  Cover and refrigerate for about 1 hour.  

Preheat oven to 350 degrees.  Line two baking sheets with parchment paper.  Shape dough into 18 (2 inch) cookie dough balls.  Arrange 9 per baking sheet.  Bake (1 sheet at a time) for 10-12 minutes.  Remove from oven and let cool 1-2 minutes on baking sheet before transferring to a wire rack to completely cool.  Enjoy!!
